Lillé is a new cheese from Vermont Farmstead Cheese Company that is based on a recipe for Coulommiers, the ancestor of Brie. Lillé won a Gold Medal at the North American Jersey Awards in 2011. Like Coulommiers, the Lillé is thicker than Brie, yet it has an excellent thin rind. The cheese has a sumptuous soft texture, a mushroom aroma, and a gentle but long-lasting nutty buttery flavor.

Spring Brook Reading is made from raw cow's milk in Reading, VT on a farm that teaches urban kids where food comes from. An American artisanal version of the famous Alpine melter , Raclette which means to scrape. This one preserves the salty funk of the classic, with more structured flavor and deeply nutty undertones.

Comté is made from the raw milk of red and white Montbeliard cows in the Jura Mountains of France in Franche-Comte. The cheese is produced in small, cooperative dairies, known as "fruitières” and age for 8 months in Jura mountain.

Gorgonzola Cremificato

Gorgonzola Cremificato is a creamy cow's milk blue of quality unrivaled by other young or "dolce" Gorgonzolas. Although inoculated with the same blue mold found in spicier blues like Roquefort, this delicate, soft, and unctuous blue is mild and subtly sweet with fresh, grassy undertones. Gorgonzola Cremificato is the perfect dessert cheese and pairs well with Muscat or other similar fruity dessert wines.
